Five on Friday – A Little of This and That

Good morning and happy Friday!  I’m babysitting my grand dog and I feel like I suddenly have a toddler again.  Dutch is way lazy compared to this spry girl and I’m hopping to keep her occupied.  So here is a quick little of this and that for five on Friday!

If you are looking for an easy summer salad to serve for Mother’s Day, this is the one!  Now, the Brianna’s poppy seed dressing is tops but know it is not a healthy option if that is what you are looking for.  I have been using my Tessemae ranch for this salad too and it works well but the poppy seed just sends this salad over the top. I found this clean poppy seed dressing recipe I may have to try.  I guess you can just buy poppy seeds at the store?  Anyway, the salad is literally just sliced strawberries, chopped walnuts or pecans or I have also used slivered almonds and a little feta cheese.  Toss with the poppy seed dressing and prepare for a flavor explosion!  Okay…maybe I’m too excited about this salad.

Some of you may be tired of hearing me rave about Rachel Hollis, but if you have already read Girl Wash Your Face then I know you get it!  This week I found her podcast and her latest recording, Stop Letting Other Peoples Opinion of You Control What You Create, was like a bonus chapter in her book to celebrate the book hitting the NY Times best seller list.  If you are a blogger and often question what you are putting out here in this “free” space, this is a good listen.  Heck, if you are a person who has ever questioned yourself as a woman, mom, volunteer, etc, etc based on something someone else thought of you then this is a great listen!

Lastly, it is Staff Appreciation Week at work and yesterday we headed out to lunch and then spent an hour together using clues to try and escape a locked room. I had no clue what to expect but we had so much fun working as a team to try and solve the mystery.  Sadly, we came up short and did not make it out in an hour but it really was a great team building session.  If you have never tried an escape room type outing add it to your list!  It would make a fun family get together too.

It is going to be a picture perfect spring weekend here in Texas and I’m so excited to be spending it at home!
