What’s Up Wednesday

April has been an interesting month here in Texas with weather much cooler than normal.  Yesterday the weather guy noted we have not (and will not) even hit 90 degrees in April which is very rare.  I’m going to soak up the spring as I’m sure it will be hot enough, soon enough!

What We’re Eating this Week

Well, Monday this is how my dinner looked!  After a long day at work and a board meeting all I really wanted to do was sit down and not use my brain for a bit.  I literally had popcorn and wine for dinner.  AND I was super happy about it!  Don’t worry, I didn’t drink the entire bottle!

The rest of the week we will be having pot roast, mashed potatoes and broccoli and then pork tenderloin using this Fed & Fit recipe

Oh, and I also made this Steak Tips Hash last week which I also added sprouts to.  It was so darn good!  I used this for breakfast several days reheated and topped with an egg.  I have never actually made steak tips before but received in our Butcher Box and decided to search for a way to use them and BAM, Paleomg had me covered.

What I’m Reminiscing About

Besties Road Trip - Houston in Color #houston #texas

Even though it was only last month, I finally recapped our Bestie Road Trip and you want to read our weekend seeing Houston in color.  Of course it has me reminiscing about all the fun we have had with these girls the past two years and I’m so glad we have traded parties for fun weekends with our besties!

What We’ve Been Up To

We celebrated Easter with family and friends to start our month!

We have been doing lots of dancing with one convention and two competitions in April.  Competition season is officially and I survived my first year of being a real dance mom.

CJ’s dance pictures came in and I just couldn’t believe how grown up she looks even though I see it every day!  This one may end up being the most changed this year.

We also tied up the end of the year with the Young Men’s Service League banquet.  I love this opportunity to have extra time with this kid!

We also tied up high school baseball and moved on to playing 7 on 7 every weekend.  This one is keeping us busy!

What I’m Dreading

We have had some major changes with a new payroll and HR system at work and while I wouldn’t necessarily call it dread, moving into the merit portion of our budget season is going to be much different than past years and trying to round up everything in order to train others is definitely weighing on my mind.

What I’m Working On

I finally made time to pull everything off the clothes racks and the shelves in my closet and evaluate the space to find a better solution.  I can’t wait to show you the before and after!  It has been much more fun getting dressed this week now that I can actually see my clothes!  Hoping to put the finishing touches on this weekend and I’ll give you guys a peek.

What I’m Excited About

Riley secured save #1 last Thursday!  He has been a little frustrated and battling a bit with one of his pitches but he still pulled this off even after loading the bases.  He always keeps it exciting and sometimes a little too much for my momma heart!  We are missing him but hope to see him soon.

What I’m Watching/Reading

I’m way behind the curve over here friends and have not even seen The Greatest Showman yet!  Nor have I caught up on This is Us.  I know, how am I even living with myself right now.  Ha!

What I’m Listening To

I gave Apple Music a try during a 3 month trial and really enjoyed the mixes but ultimately decided to pass and head back to the free Spotify for work.  Yesterday I was listening to the Hot Country Mix and this new song by Kelsea Ballerini was a quick favorite.

Also still podcasting it up over here and I really need to do a little roundup of my favorites soon!

What I’m Wearing

Purple is the color of the year and I’m glad I’m finding new ways to wear these lavender jeans!  You will also see these are definitely my favorite spring shoes.  I love them so much I’m considering ordering in black because I just can’t seem to find another pair I love as much.  

Yellow is a color I haven’t had in my closet much but when I wear it I wonder why the heck not.  Hello Yellow!  These little cardigans are perfect for spring and summer and this one is 30% off today!  I have it in two colors and it has been heavy in the rotation.  

And if you missed my spring Stitch Fix review, you can see all the times I received but I’ll clue you in, this top was the keeper!

What I’m Doing this Weekend

My oldest is heading to Vegas to celebrate her roommates 30th birthday and I will be babysitting my grand dog Pesto!  She hasn’t stayed with us for awhile and Carly is excited.  Keith is heading fishing and I’m kind of just excited about being home!

What I’m Looking Forward to Next Month

The calendar for May is stacked!  I’m looking forward to dance recital, seeing Riley play some baseball, and a little roadtrip with Jordan.   The end of school will also be a HUGE highlight because even though I still have to work knowing we have a little break from the every day schedule is definitely a win.

It may sound lame, but we almost always give our moms a hanging basket of spring flowers!  It’s easy, it won’t clutter up their house and they both love them.
