What We’re Eating this Week

Hmm….that’s a good question!  I would have to say this is a look at what I have been eating because I was totally selfish and only focused on cooking something clean for myself to be sure I ate well at least Monday and Tuesday!  The rest of the week Keith and I will be enjoying dining out and no dishes to clean!  Cuban Pork Casserole - Fed & Fit

While this recipe might not be for everyone, I absolutely love this Cuban Pork Casserole!  Since I’ve been really cutting back on the potatoes, the plantains give some of the potato texture and the mango salsa seals the flavor to make this one of my faves the last two months.  I threw this together and ate for lunch and dinner on Monday and Tuesday.

Zoes Kitchen - The Queen in Between Blog

I did try Zoe’s Kitchen for the first time and had the salmon kabobs with a double side of veggies. It was AH-Mazing!  I will definitely be heading back for another visit.

And this is just an example of a quick meal I tossed together for my lunch using some leftover spaghetti squash, brussel sprouts and a grilled chicken breast.  It was delicious, healthy and so easy!

This kid finally started driving!  It’s a little stressful the first time they leave the house…..but it has been such a help to have him driving himself to and from activities.

Last weekend she performed with her group with one hip hop and one jazz dance in the Dallas area where they were awarded platinum and ultra high gold.

What I’m Working On

Still working on staying committed to the Wellness Challenge I’m participating in.  I will say I’m definitely feeling much more in control which was my number one goal.  My relationship with food can become toxic for me sometimes and, while I holistically believe in learning to eat a healthy, balanced mix, when I’m “sick” it really does take me to a bad place.  After about 7 weeks I’m no longer thinking about food all the time which makes it much easier to enjoy things I love in moderation.  I’m still eating mainly a paleo meal plan but have added in a few adult beverages here and there and managed to eat a few tortilla chips without mindlessly eating an entire basket!

What I’m Watching/Reading

Y’all, I still have not been able to bring myself to catch up on This is Us!  I just have not felt emotionally prepared enough to handle it.  I know, I know…get a grip.  I really haven’t watched anything else either….but that means I’ve had plenty of time to read!  These are the books I’ve read this past month so be sure to check out the February Book Review to see if I loved them!

What I’m Listening To

I have listened to almost all of the Jamie Ivey podcast in her Happy Hour series focused on If You Only Knew where she is interviewing women who are sharing a secret others might be surprised to know.  It was so inspiring to listen to these women talk about “coming out” with an issue they were battling and how God met them right were they were.  I highly recommend listening!  One of my favorite lines I heard was “our secrets make us sick”.  It’s so true and my “secrets” definitely kept me out of church, away from God and probably cost me some friendships and family relationships.

And I’m LOVING Jason Aldean’s new song You Make it Easy.  I am not typically a Jason Aldean fan but my opinion was definitely swayed on this one!

This easy, lightweight sweatshirt is a fun new purchase that pairs well with my fave leggings and I’m super excited to finally have a new gym bag.  Mine was awful.

I took this camo top from day to date in a recent post and I’m taking it along on our trip to possibly wear over a black maxi tied at the waist.

And this striped top from my recent spring try on session has become a fast favorite!  Can’t wait to pair with orange shorts for one of the games this weekend.

Outfit Remake - The Queen in Between Blog

I’ve still been really working on shopping my closet and when I saw the look on the right cross my Instagram feed I knew I had pieces to recreate the look!  I love how it turned out.  This jacket is 4 seasons old and I still love it and I don’t know why it always slips my mind to pair with a striped top.  The scarf has been around a LOOOOONG time…like if you remember Casual Corner you will totally know how long!  It’s been neglected and forgotten in a box but I’m super excited I brought it out.  I think I’m going to be repeating this one.

What I’m Doing this Weekend

We are heading to spring training in West Palm Beach Florida!  So excited about soaking up some sunshine and some baseball.  I’m sure I’ll be sharing on insta-stories!

Bonus: What is Your Favorite Spring Break Destination

Baseball has dictated our spring breaks for at least the past 10 years and I don’t really see that changing any time soon.  When we aren’t headed off to Florida for spring training the coast is often our first choice.  We are lucky to be near enough to drive down for a long weekend.  The boys get to fish and the girls have a little time on the beach.
