What’s up Wednesday but on a Thursday! I was shocked when I realized it was the last Wednesday of the month yesterday and totally missed wrapping up our month with one of my favorite posts. What We’re Eating

Chicken Parm recipe

I was looking for a lower carb, lower fat version of chicken parmesan but one that also still tasted good. This baked chicken parmesan was a win for everyone in the family and will be repeated. I’ve linked a recipe I know is similar bur cannot find the exact one I used. I actually used a brush to add the egg to both sides of the chicken and highly recomend using thin chicken breast too insure they are cooked perfectly. So yummy!

Breakfast

We had leftovers from Gringos so I used them with my bacon and eggs and this was so darn delicious! I definitely underestimated the value of black beans at breakfast!

What I’m Loving

Beauty Counter Polish

I’m obsessed with the new Beauty Counter line, Reflect Effect. I’ve been using the Smoothing Mask for the past year every week or so but this newest product, Bamboobuff exfoliating polish has me swooning. It is a powder that you combine with your cleanser and it gives a gentle exfoliation. I’ve been using it for my morning face wash.

Galentines

Jordan and I were invited to a fun little Galentines event at a local hotel. I grabbed this pink blazer from a local boutique and can’t wait to wear it all spring and summer!

Strutters

We are heavy into dance competition season and Carly’s team has been working so hard. They held a “show off” event with several other high schools and it was so fun to see them perform the dances for the first time in their new costumes.

What I’m Working On

An itenerary for a mother/daughter weekend in Chicago in May! I’ve never been and Jordan and I decided to take a short little getaway to check out the windy city. Let me know if you have any tips!

February Book Review

I shared my February book review yesterday and there were some 5 star reads for sure! Currently I’m reading the Magnificent Lives of Marjorie Post.

What I’m Listening To

Spare #audiobook #goodread

Currently listening to Spare on audible and loving it. It is very long,however, as I think I’m on chapter 50 something and still have like 10 hours left to listen. If you are a prime member you are typically eligible for a free audible trial and it comes with a monthly book credit. I love listening to memoirs read by the author.

The Lazy Genius #podcast

I listen to lots of podcasts randomly when the title catches my eye and this episode is gold. If you struggle with navigating your changing body whether that is from pregnancy, post partum or menopause, give this episode a listen. PS…this is an episode about accepting and loving your body not restricting or changing it!!

What I’m Wearing

This blazer was an Amazon purchase I failed to send back! Nothing wrong with it, but it just didn’t fit me perfectly through the shoulders. I’ve been determined to wear it at least a few times to get that price per wear number down! I also picked up a couple of new no-iron shirts from Chicos recently and forgot how much I love them. They come in so many colors and patterns and the price is seriously worth the no-iron feature in my opinion as I will certainly grab it more if I don’t have to iron it!!

Little Black Dress #spanx

This little black dress (also comes in red) from Spanx is so good! It’s perfectly stretchy, a great length for work and can be styled so many ways. It is an investment but a classic piece that would stand the test of time and great quality. They also have an a-line version if the sheath is not your favorite style. I shared a reel last week with a few of my favorite ways to wear it!

What I’m Doing this Weekend

I will head to my moms this weekend to spend some time with her. The decline in the past year has been swift and heavy but there are times when she is still there and still my mom. It gets harder and harder to just pull the joy from those moments to gain strength for the times when it’s not so pretty but I definitely try.

What I’m Looking Forward to Next Month

We are headed to Hawaii for spring break and I can’t believe it’s almost time! I’ve never been and we are super excited. Believe it or not, Carly’s drill team is actually going to perform and Keith & I are just tagging along. We will spend the first part of our trip on Oahu and then check her out and head to Kauai for a few days.
