It’s been awhile since I’ve shared any food around here!  I don’t know about you, but lunches always seem to become boring the fastest for me.  As a true food lover, I have to keep it somewhat interesting and while I don’t mind eating the same lunches over and over, I can only stare at a salad so many days in a row before it becomes boring.  Enter the easy turkey roll up!

Now, for months I used lettuce to prepare wraps for my lunch using chicken, taco meat and pretty much anything else normally fitting for a taco shell.  The majority of the time, however, I’m eating at my desk and using the lettuce as the “shell” could sometimes become a little messy.  Why had it never dawned on me to switch things up and actually add the greens on the inside?

These roll ups are so easy and super filling while still remaining low in calories.  Bonus, I’m able to make these on Sunday for the full week of lunches if I want to meal prep.  First, I cook about 8 pieces of turkey bacon in the oven.  You could easily skip the bacon or use regular bacon as well.  I’ve chosen a spinach and red pepper for my filling but these could be easily swapped out for lettuce, tomato, pickles, etc. Starting with the turkey, I layer my items.  Obviously any lunch meat will suffice.

I wanted a little kick for my roll ups and chose dijon mustard.  Some other winners would be pesto, mayo or even olive tapenade.  Spreading just a thin layer on top does the trick!

Simply roll up from there and pin with a cute little toothpick and ta da, lunch!  I added a little greek salad and was good to go.  These quickly became an easy favorite for me and I really think they would work so well in kids lunches too.
