What We’re Eating this Week

Low Carb Stuffed Bell Peppers

While I’m working on following a 21 days cleanse I’ve been using some of my go to recipes and made these low carb stuffed peppers this week.  So yummy!  Simply replace the rice with cauliflower rice to make them a little healthier.  You can find the recipe along with some of my other favorite recipes.

Favorite Snack - Plantains and Guacamole

And these plantain chips have seriously been saving my life and keeping me from diving into my favorite got to snack of chips and salsa.  They are so easy to make homemade and spares you from the extra sodium.  I’ve been enjoying with 1/2 an avocado or some salsa.  Isn’t this dish towel adorable (and true)?

My sweet Dillon turned 16 this month and I’ve been thinking alot about how fast he’s grown and how excited I am to watch him take some new steps into young adulthood like driving!  He was just the squishiest little baby and always such a happy guy.  Now he is 6’3″ and when I can catch him for a hug he definitely wraps me up instead of the other way around.

What We’ve Been Up To

January has been a somewhat lazy month for us and it has been so needed.  We have been home more than we have been gone which has been so nice and while I wish I could say I’ve been more productive I think we have all been catching up on rest.  Hopefully our bodies are gearing up to be ready for a busy spring!

What I’m Working On

Still working on finishing the kids bedrooms.  We purchased this bed for Carly Jo but the bookcase headboard has been out of stock. The store near Keith’s office was restocked this week so I’m hoping he makes it before they sell out again!  I’m thinking we have finally found bedding we can both agree on.  I really wanted something to last through her teen years and I think keeping the bedding simple will allow us to change things up over the years with new decorative pillows, etc.

This kid received an invitation to Big League Spring Training and we are just over the moon for him!

What I’m Watching/Reading

I shared my January book review earlier this month and have already crossed another off my list since!  Up next on my list is Grace, Not Perfection and I’m currently reading  The Things We Wish Were True.

And of course like the rest of the world, I’m trying to use this week to prepare mentally for This is Us on Sunday night!  I just don’t know if I can handle it.  Holy bawl fest!

What I’m Listening To

Podcasts have been a new favorite for me and I’ve been listening to Jen Hatmaker interview women such as Emily Ley and Rachel Hollis and just soaking up some goodness from these inspiring ladies.  If you haven’t given this podcast a listen it is a great one to start with!

I’ve really been working to use the items in my closet and make some decisions about tossing or keeping things I love but may just not be working for me anymore.

Speaking of confidence, learning to balance patterns together to mix something like floral and dots has really changed up my closet and given me so many more options.  I love how this outfit came together!  If you are looking for a great blazer I tried on this one last night and it is so perfect and comes in tall too.

Peplum Top | Frye Boots | Jacket (similar)

I shared this peplum top Friday and I am so loving it.  I’ve tried a ton of peplum styles because I love the look but it doesn’t always love me.  I don’t know if it’s the fabric or the slight high low hem but this one I’ve already worn 3 times in a week.   It’s worth a try for $21!  My Frye boots are on their 3rd season and still in perfect condition.  So glad I splurged on them!

And lastly…I did order this top from my Five on Friday for both Carly and I and hopefully it will arrive soon so I can give you guys some feedback on the fit.  I just thought it was too cute.  Still debating ordering this one too.

What I’m Doing this Weekend

Hopefully more housekeeping around here!  The kids bathroom is oh so close to being completed.  I purchased these floating shelves  and used MPix to grab big prints of a couple of pictures, including this one below, from our Arizona trip.  Hopefully will have everything in place soon.

What I’m Looking Forward to Next Month

Carly will also have her first performance of the year with her competition dance team and she will also head to her first dance convention.  I’m most excited because the stars aligned and will be able to room with our besties in Houston as the girls dance their hearts out.

Ohhhhh….I would have to say one of my very favorites is the Sausage Tortellini soup Shay makes!  I screwed up and didn’t make it before I jumped on this no pasta initiative and I’m kind of mad about it.  Ha!

Tastes Lovely Chicken Zoodle Soup

But this Chicken Zoodle Soup is damn good y’all!  I seriously ate the entire pot myself last week and really can’t wait to make it again.  Delicious!  I followed this recipe but used a rotiserrie chicken instead and skipped a portion of the directions.  I was surprised the zoodles didn’t get mushy even as leftovers.
